Cameron’s Cooler – One of the Coolest Cocktails Around

Well, here we go again…..we made it to another summer and it’s time to ramp up the parties and social events.  You’ve got the food, but how about a great new cocktail to wow your guests?  Try Cameron’s Cooler.  You’ll need one hour to chill the ingredients; but the rest is easy, and it’ll only take a few minutes to prepare:

Ingredients (for 8 drinks):

– 12 ounces of blended Scotch (“blended” means two or more whiskies; any liquor store will have it)

– 4 ounces of dry white wine (try Sauvignon Blanc)

– 4 ounces of fresh lemon juice

– 4 ounces of simple syrup*

– 8 ounces of chilled ginger beer or ginger ale

– Plenty of ice

– Angostura bitters (for garnishing; can be found at any liquor store)

Directions:

– Mix the first 4 ingredients in a large, sealable container and chill for an hour

– Once chilled, make sure the lid is sealed tightly, shake well and pour into a pitcher filled with ice

– Strain into Collins glasses filled with ice, stir in ginger beer; garnish with a dash of the bitters

(* To make simple syrup: combine equal parts of water and sugar, bring to a boil, stir until sugar completely dissolves.  Cool to room temperature and refrigerate.)

Cameron’s Cooler is a perfect, crisp, refreshing cocktail that both men and women will enjoy: men will love the addition of scotch, and women will love the lightness added by the white wine and ginger beer.  This cocktail also pairs well with some great foods:

– Parmesan crisps (sprinkle grated Parmesan cheese into piles and bake at 350° until lightly browned and crispy)

– Roquefort cheese with an assortment of crackers

– Raw oysters (for those that love raw seafood), or cooked, chilled shrimp

– Smoked salmon on toast points

– Duck Bolognese (prepared like a classic Italian Bolognese; the rich duck and pasta pairs nicely with this cocktail’s edginess)
